This big bowl of rice noodles is served cold and layered from the bottom with shredded lettuce and cucumber; your choice of protein (chicken, beef, pork or tofu — we went with pork); and topped with chopped peanuts, cilantro and carrots that have been lightly pickled. Comes with a cup of Golden Chopstix house sauce — a dressing of sweetened rice wine vinegar, homemade fish sauce and secret seasonings — which is poured over the dish. Be sure to request the extra-large chopsticks to combine the ingredients well. While you’re at it, we recommend topping the dish with a chopped spring roll for $3 more. There are more ways of customizing this dish than we can fit in this space, but suffice it to say there’s something for everyone in this bowl. Golden Chopstix bottles and sells several varieties of its homemade sauces for $6.99, by the way — your refrigerator wants one.

This dish at Golden Chopstix was my first introduction to Vietnamese food and still my favorite. Great stuff!
